Abstract
The purpose of this investigation was to obtain data on the fattening performance and carcass quality of Eastern Anatolian Red Steers. Thirty steers about 16-18 months of age were allocated into three groups and fed ad libitum for 112, 140 and 168 days with same type of diet which had 1 : 7 nutritive ratio (the ratio of digestible crude protein starch unit). The average live weight of the groups were increased up to 269.0, 293.0 and 315.8 kg at the end of fattening periods respectively, which were 161.8, and 315.8 kg at the end beginning of the fattening.Average concentrate feed, starch unit and digestible crude protein consumption for one kg live weight gain of the groups were estimated as 5463,6161 and 7004 gr, 3464,3907 and 4442 SU,467,561 and 637 g respectively. The dressing percentages were calculated as 58.1 %, 59.6 % and 60.8 % respectively. The differences among the groups were statistically significant ( P 0.001). The highest meat ratio in the carcass was found in group! (63.16 %); this was followed by group 2 (61 .9 %) and group 3 (60.3 %) The differences among the groups were statistically significant (P < 0.01). The highest fat ratio was found in 3 (21. 7 %) that was followed by group 2 (20.4 %) and group 1 (18.9 %). The difference among the groups were statistically significant ( P 0.01). There were no statistically significant differences between the groups from the point of area between 8th and 9th ribs.
