Abstract
Bu çalışmada; broylerlerde yenilebilir karkas bileşenleri ve sakatat ürünlerine cinsiyetin etkilerini saptamak amacıyla 42 günlük yaşta erkek ve dişi piliçler kullanılmıştır. İşlem esnasında tüyler, baş, ayaklar, karkas, kalp, karaciğer, taşlık, karın yağı, boyun, kanat/ar, göğüs ve bulutların ağırlıkları saptanmıştır. Bütün veriler ham ağırlık ve canlı ağırlığın yüzdesi olarak ifade edilmiştir. Tüyler, ayaklar, karaciğer, taşlık, göğüs, boyun ve kanatların canlı ağırlık içindeki payı bakımından erkek ve dişi arası farklar önemli bulunmuştur (P<0 .001, P<0.01, P<0.05, P<0.001, P<0.05, P<0 .01, P<0 .001). Erkeklerle karşılaştırıldığında dişiler daha yüksek oranda tüyler, bütün ve yenilebilir karkas, kalp, karaciğer, taşlık, karın yağı. göğüs ve kanatlara, dişilerle karşılaştırıldığında erkekler daha yüksek oranda baş, ayaklar, butlar ve boyuna sahip bulunmuştur. Her bir cinsiyette canlı ağırlık ve karkas bileşenleri arası ilişkileri tanımlamak için regresyon analizi kullanılmıştır.
In this study, male and female chickens at 42 days of age were utilized to determine the effect of sex on yield of various offal and edible careass components of broilers. During processing, the weight of feathers, head, feet, carcass, heart, liver, gizzard, abdominal fat, neck, wings, breast and thighs were determined. All data were expressed as a raw weight and as a percentage of live body weight. There were signifıcant differences between male and females for the feathers, feet, liver, gizzard, breast, neck and wings as a percentage of live body weight (P<0 .001, P<0 .01, P<0.05, P<001, P<0.05, P<0.01, P<0.001). Females had a greater percentage of feathers, whole and edible carcasses, heart, liver, gizzard, abdominal fat, breasi and wings in comparison to males and males had a larger percentage of head, feet, thigh and neck in comparison to females. Regression analyses were used to describing the relationship between careass components and body weight for each sex.
