Abstract
Zeytin, ülke ekonomimiz ve halkımızın beslenmesi açısından önemli bir tarımsal ürünümüzdür. Bu çalışmada, zeytinin geleneksel tüketim olanaklarına bir yenisini ilave ederek pazarlama ve ticari değerini artırmak amaçlanmıştır. Sonuç olarak; zeytin reçeli tüketiciler tarafından beğenilmiş ve dolgu maddesi seçiminin, tadı büyük ölçüde maskelenmesi nedeniyle önemli olduğu ve bu konuda bir optimizasyona gidilmesi gerektiği anlaşılmıştı.
The olive is an important product with respect to our national economy and our people's nutrition. The aim of this study was to present the olive to consunıption in a way different from conventional means, and to increase its commercial value. As a result, olive jam was approved by consumers, and it was understood that the selection of stuffing material was important since it masks the flavour greatly and that an optimisation was necessary in this field.
