Abstract
Bu çalışmayla brokoli, ıspanak, marul, beyaz lahana, pırasa ve rokadaki nitrat ve nitrit konsantrasyonunun belirlenmesi amaçlanmıştır. Sebze numuneleri Bursa’daki farklı sebze bahçelerinden ve bir pazaryerinden, 2000 yılının şubat, mart, nisan aylarında alındı. Toplam 51 sebze numunesi spektrofotometrik yöntemle analiz edildi. Nitrat konsantrasyonları nitrat azotu olarak minimal 0.50, maksimal 206.00 ppm bulundu. Sebzelerdeki nitrat miktarları büyükten küçüğe doğru roka, marul, taze ıspanak, brokoli, beyaz lahana ve pırasa olarak sıralanmaktadır. Yöntemin duyarlılık sınırları içinde nitrit tespit edilemedi. Araştırmanın sonuçlarına göre, analizi yapılan sebzelerin nitrat ve nitrit konsantrasyonlarının insan ve hayvan sağlığı açısından bir risk oluşturmayacağı kanısına varıldı.
The aim of this study was the determination of the nitrate and nitrite concentrations in broccoli, spinach, lettuce, white cabbage, leek and rocket. The vegetable samples were taken from different fields, a marketplace in Bursa in February, March and April of year 2000. Totally 51 vegetable samples were analyzed by spectrophotometric method. Minimal and maximal nitrate concentrations were found to be 0.50 and 206.00 ppm as nitrat nitrogen. The nitrate contents of vegetables from the highest to the lowest were found in rocket followed by lettuce, fresh spinach, broccoli, white cabbage and leek respectively. Nitrite could not be find in detection limits. It was concluded from the results that nitate and nitrite concentrations found in vegetables are not risky for human and animal health.
