Farklı yörelerde yetiştirilen bazı çilek çeşitlerinin soğuk muhafazaya uygunlukları üzerine bir araştırma

Abstract
1995 yılında yapılan bu çalışmada Bursa ili sınırlan içinde yer alan ve rakımları birbirinden farklı olan, Görükle (150 m), Şevketiye (400 m) ve Alaçam (950 m) yörelerinde yetiştirilen Red-Chief, Honeoye, Selva ve Dana çeşidi çilek meyvelerinin soğuk muhafazaya uygunluklan incelenmiştir. Çilek meyveleri 0°C (±0.5) sıcaklık ve % 90-95 oransal nem koşullarında 8 gün ve buna ilave olarak oda sıcaklığında (24-27°C) 1 gün muhafaza edilmişlerdir. Meyvelerden alınan örneklerde 0 ., 4. , 8.ve 8+1. günde ağırlık kaybı, solunum hızı, suda çözünebilir kuru madde, titre edilebilir asit , pH, askorbik asit, meyve rengi, tat ve görünüm gibi kalite kriterleri incelenmiştir. Araştırma sonucunda, ele alınan kalite kriterlerindeki değişimler değerlendirildiğinde soğuk muhafazaya uygunluk bakımından en iyi sonuç rakımı en yüksek yöre olan Alaçam (950 m)'da elde edilmiştir. Çeşitler arasında Red-Chief ve Honeoye çeşitleri, diğer iki çeşide göre muhafazaya daha uygun bulunmuşlardır.
This research was conducted in 1995. It was carried out to determinethe suitability of strawberry fruits cvs. Red-Chief, Honeoye, Selva and Dana (which were) grown in three regions with different elevations within Bursa boundaries, Görükle (150 m), Şevketiye (400 m) and Alaçam (950 m) to cold storage was investigated. The strawberry fruits were stored at 0°C ( i 0.5) temperature and 90-95 % relative humidity for 8 days and at room temperature (24-27°C) for 1 day. In the samples taken from fruits, quality criteria such as weight loss, respiration rate, water soluble solids, titratable acidity, pH, ascorbic acid, fruit colour, taste and appearance were investigated at the 0., 4., 8. and 8+1. days. At the end o f the research, when the changes İn quality criteria considered were evaluated the best result with respect to suitability to cold storage was obtained from Alaçam with the highest elevation (950 m). Cvs. Red-Chief and Honeoye were found more suitable to cold storage.
