Abstract
Çalışmada Pirate çeşidi brokkolilerin kontrollü atmosferde (KA) depolanma potansiyeli araştırılmıştır. Plastik kaplar içerisindeki brokkoliler, 0±0.5°C sıcaklık ve %90-95 nispi nem (n.n.) ortamındaki soğuk hücrelerde, farklı KA koşullarında [(%CO2: %O2) 0:21-kontrol, 5:2.5, 5:5, 5:7.5, 5:10] 84 gün süreyle muhafazaya alınmıştır. Brokkoliler, raf ömrünü belirlemek amacıyla, muhafazaya ilaveten 7 günde oda koşullarında bekletilmiştir. Muhafaza süresince ve raf ömrü sonunda alman örneklerde bazı fiziksel ve biyokimyasal analizler yapılmıştır. Çalışma sonucunda, tüm KA uygulamaları kontrole göre daha başarılı sonuçlar vermiştir. KA uygulamaları arasında ise 5:2.5 ve 5:5 KA bileşimleri daha iyi olarak belirlenmiştir.
In this sudy, storage potential of broccoli cv. Pirate was investigated. The broccoli which were stored in plastic boxes for 84 days under different controlled atmosphere conditions [(CO2%: O2%), 0:21-control. 5:2.5. 5:5. 5:7.5. 5: 10] at 0±0.5°C temperature and 90-95%RH were thereafter kept ar room conditions for 7 days, with the aim of determining their shelf life. Some physical and biochemical analyses were conducted with broccoli in the samples taken during storage period and at the end of shelf life. At the end of study, all CA applications gave more successful results compared with control. Among CA applications, 5:2.5 and 5:5 CA combinations were determined to be better than the others.
